Top chef Chele Gonzalez has been to Singapore nearly a dozen times, but he has never been as keen to learn about the country’s food than in his most recent trip. He admitted to having had more intent and focus when tasting the flavours of iconic dishes such as laksa and Hainanese chicken, imagining how he could spin them to come up with exciting numbers for his one-night-only dinner menu.
