Peri-peri chicken kebabs with tzatziki

Preparation time 30 minutes, plus time to marinate overnight

You need
• 12 chicken thigh fillets
• salt and black pepper, to taste
For the marinade
• 3 tablespoons olive oil
• 1 teaspoon chilli flakes
• 2 bird's-eye chillies, finely chopped
• 2 teaspoons finely chopped fresh garlic
• juice of 1 lemon or 2 limes
• 2 teaspoons smoked paprika
• 1 teaspoon dried oregano
For the tzatziki
• 1 big cucumber, in small cubes
• 1 teaspoon salt
• 1 clove of garlic, finely chopped
• 1 cup thick, plain yoghurt
• 8 fresh mint leaves, chopped
• juice and grated zest of 1 small lemon
• black pepper, to taste
