CHICKEN BEET SALAD with CARAMELISED SEEDS & ORANGE MUSTARD DRESSING
SERVES 4 / PREPARATION: 20 MINS / COOKING: 30-40 MINS
This is a delicious light meal. Instead of feta, you can pan-fry halloumi and serve it with the salad.
ORANGE MUSTARD DRESSING
125ml (½c) orange juice juice and grated zest of 1 lemon
30ml (2T) olive oil
2 garlic cloves, crushed
15ml (1T) wholegrain mustard
5ml (1t) Dijon mustard
15ml (1T) honey
45ml (3T) freshly chopped parsley, coriander and mint salt and pepper
SALAD
6-12 deboned, skinned chicken thighs chicken spice
1 bunch of small beets
1 round feta cheese, crumbled
1 red onion, thinly sliced
GARNISH
generous handful of sunflower and pumpkin seeds
