CHEAT’S FRUIT CAKE
Preparation time 20 mins plus overnight setting
Cooking time nil
Serves 12
600g packet ready-to-roll white icing
Green food colouring
20cm round storebought fruit cake (or Choc-orange fruit cake, see recipe below)
¼ cup dark rum
¼ cup apricot jam, warmed
Gold and silver cachous and ribbon, to decorate
STEP 1 Divide white icing into quarters. Tint 1 portion pale green, 1 mid green and 1 dark green. Leave 1 portion untinted and cover with plastic wrap to prevent it drying out.
STEP 2 Using about 2 tablespoons of pale green icing at a time, press into 2 holes of a 6-hole bauble mould. Repeat for mid- and dark-green icing. Stand for 1 hour, then unmould. Sit at room temperature, uncovered, to dry for 6 hours or overnight.
STEP 3 Put cake on a serving board and poke holes one-third of the way into the cake all over. Place rum in a microwave-safe jug and heat in microwave on HIGH (100%) for 15-30 seconds. Brush warm rum over cake.
