HISPI CABBAGE, SESAME, MEDJOOL DATE, SEAWEED
Serves 4 Prep + cooking time 1 hr 15 mins
2 hispi cabbages
SESAME SAUCE
200g white sesame seeds
500ml water
20g honey
20g chardonnay vinegar
10g salt
MEDJOOL DATE DRESSING
200g pitted dates
20g Dijon mustard
50ml verjus
10g salt
5g Cracked black pepper
200ml water
SEAWEED TOGARASHI
30g white sesame
30g black sesame
3 nori sheets
5g sugar
5g salt
10g fried shallots
1 To make the sesame sauce. Place sesame seeds in a Thermomix or blender and blitz until fine powder. Add the rest of the ingredients and blitz until it creates a dressing consistency. Place in a container to use later.
For the Medjool date dressing, place all ingredients in a pot and bring to a simmer. Remove the ingredients and place in a blender, blitzing until the consistency of a dressing is achieved.
