3 pounds sweet potatoes, cut into 4x¾-inch sticks (about 3 large)
4 whole green onions
2 tablespoons plus 2 teaspoons olive oil, divided
½ cup mayonnaise
½ cup sour cream
1 tablespoon packed chopped
