light olive oil, for shallow-frying
Tzatziki and lemon wedges, to serve
CHICKEN MEATBALLS
500 g chicken mince1 all-purpose potato (such as sebago), peeled and very finely grated, excess moisture squeezed out1 small red onion, grated, excess moisture squeezed out2 garlic cloves, finely grated1 egghandful of flat-leaf parsley leaves, finely chopped,handful of mint leaves, finely chopped, plus extra sprigs to serve1 teaspoon finely grated lemon zest1 teaspoon dried oregano2 teaspoons ground cumingenerous pinch of sea salt flakes and freshly ground black pepper
