MAKE ROOM FOR MUSHROOMS
Experiment with these popular varieties available at supermarkets and greengrocers
SWISS BROWN A small mushroom but one of the heartiest with a robust umami (savoury) flavour.
OYSTER They appear delicate but oyster mushrooms actually have a firm and velvety texture.
PORTOBELLO The large round cap has a meat-like texture and flavour, making it a popular alternative for vegos.
ENOKI The clumps of stems look like spaghetti and have an appealing crunchy texture and almost fruity taste.
SHIMEJI This mushroom has a firm texture and a meaty yet sweet and nutty flavour. It’s perfect for stir-fries, soups or pasta dishes.
CHANTERELLE An aromatic wild mushroom available from June-October with a meaty and chewy texture.
BUTTON Has the mildest flavour, which intensifies slightly when cooked.
SHIITAKE As it contains significantly less water than other varieties, this mushroom holds its size during cooking.
