1 SWISS BROWN A small mushroom but one of the heartiest with a robust umami (savoury) flavour.

2 OYSTER They appear delicate but oyster mushrooms actually have a firm and velvety texture.

3 PORTOBELLO The large round cap has a meat-like texture and flavour, making it a popular alternative for vegos.

4 ENOKI The clumps of stems look like spaghetti and have an appealing crunchy texture and almost fruity taste.

5 SHIMEJI This mushroom has a firm texture and a meaty yet sweet and nutty flavour. It’s perfect for stir-fries, soups or pasta dishes.

6 CHANTERELLE An aromatic wild mushroom available from June-October with a meaty and chewy texture.

7 BUTTON Has the mildest flavour, which intensifies slightly when cooked.

8 SHIITAKE As it contains significantly less water than other varieties, this mushroom holds its size during cooking.
