RECIPE NOTE: This is meant to be a hearty, thick soup… but you can add a little extra liquid before baking in the oven if you prefer a thinner texture.

RECIPE NOTE: This soup will thicken on standing. Add a little boiling water when reheating to adjust texture. Store in the fridge for up to 5 days or freeze for up to 3 months.

When the breeze turns brisk, thoughts turn to comforting bowl food, and nothing fits the bill quite as well as a beautiful soup. These recipes are all made in one pot or pan, which allows the flavours to mingle and build into more than the sum of their parts. A final flourish is all that’s needed to lift them up to another level, whether it’s the crunch of corn chips on a Mexican-inspired number or fresh herbs and lime to brighten an Indian khichari. Grab your ladle and let these soups nourish and satisfy.
