Steak and Smoky Harissa Butter (gf)

Melting a dollop of smoky harissa and lemon butter over a warm, juicy steak is a ticket to happiness.

PREP: 10 minutes COOK: 10 minutes SCALE: easy

2 rib-eye steaks or another steak of choice
olive oil
sea salt and ground pepper
1 cup purchased hummus
Warm Chickpea, Tomato and Currant Salad (see recipe below)

SMOKY HARISSA BUTTER

100 grams butter at room temperature
2 tablespoons harissa paste or more to taste
¾ teaspoon smoked paprika
finely grated zest 1 lemon
1 teaspoon sea salt

SMOKY HARISSA BUTTER: Stir all the ingredients together in a bowl and set aside.

STEAKS: Rub the steaks with a little olive oil and season well with salt and pepper.
