Pork Fennel Sausages with Apple and Carrots
SERVES 4
PREP & COOK 50 MINS
■ 3 red apples (600g), quartered, cored
■ 2 medium bulbs fennel (600g), halved, thinly sliced
■ 2 bunches Dutch carrots, trimmed, washed, halved lengthways
■ 2 tblsps olive oil
■ ¼ cup chopped fresh sage leaves, plus fried sprigs to garnish
■ 500g packet Italian Style
Fennel Pork Sausages, halved lengthways
■ Mashed potato and ready-made gravy, to serve
