Low-cal PASTA

Lighter carbonara

If you fancy a quick carbonara but need to save some calories, try this easy version for a change.

SERVES 4 PREP 5 MINS COOK 20 MINS

330g spaghetti
100g half-fat creme fraiche
2 medium egg yolks
80g pack Parma ham
150g button mushrooms, sliced
2 garlic cloves, grated
3tbsp flat-leaf parsley, chopped, plus extra for garnish
25g grated Parmesan

1 Cook the pasta according to the pack instructions, drain, reserving 300ml of the pasta water.

2 Meanwhile, combine the creme fraiche with the egg yolks and season generously with ground black pepper. Set aside.
