IN SEASON
FENNEL
Fennel has a slight aniseed or licorice flavour with a crunchy texture. It was highly regarded by ancient Greeks and Romans for its medicinal and culinary properties. However, it wasn’t until the 1950s that its popularity grew, due to the emigration of southern Europeans. It is related to the parsley, dill and coriander family.
