Slow-cooked COMFORT

Fire cracker brisket

SERVES 6 PREP + COOK TIME 8 HOURS 30 MINUTES

2 tablespoons extra virgin olive oil
1.2kg beef chuck steak
2 medium red onions, chopped
2 teaspoons smoked paprika
2 teaspoons mustard powder
1 teaspoon ground cinnamon

1 teaspoon cayenne pepper
2 cloves garlic, sliced thinly
1 tablespoon treacle
2 tablespoons red wine vinegar
3 bay leaves
2 fresh long red chillies, pierced with a skewer
1 cup (260g) bottled tomato passata
1 tablespoon Worcestershire sauce
Coriander leaves, flatbreads, sour cream, to serve

Heat oil in large frying pan. Cook beef until browned all over. Transfer to a 4.5-litre (18-cup) slow cooker. Add onion to same pan, cooking for 5 minutes or until softened. Add paprika, mustard powder, cinnamon,
