Watermelon ‘pizzas’

Salty feta and sweet watermelon make a great combo in this no-cook snack that comes together in a flash.

SERVES 6 PREP 10 MINS

½ small seedless watermelon, cut into thick slices
200g feta, crumbled
100g pitted black olives (we used Kalamata)
1 avocado, cut into bite-size chunks
Handful rocket
Small bunch basil, leaves picked
½ lemon, to serve

1 Cut the watermelon slices into half moons or wedges and arrange on a board or platter.

Pile the feta, olives, avocado, rocket and basil onto the watermelon bases and serve with a grinding of black pepper and
