Louisiana Cookin’ Chefs to Watch 2023

In 2002, Louisiana Cookin’ announced its first-ever class of Chefs to Watch. In the years that have followed, we’ve seen new generations of chefs carry on Louisiana’s time-honored traditions while bringing fresh perspectives to the forefront of the state’s vibrant culinary scene. Like those before them, our 2023 class of Chefs to Watch are exceptionally talented individuals from diverse backgrounds who are leaving a mark on their communities. These are six chefs we believe will continue to enrich Louisiana’s dining scene and shape the future of Cajun and Creole cuisine with new ideas and influences.

This year’s Chefs to Watch lineup includes Michelle Huynh of EM’s Bakery in Baton Rouge, whose take on Japanese baked goods will let her set new standards for sweets and savories; Desi Bourgeois of Grown and Grazed in Ruston, whose food truck showcases his deep appreciation for local Louisiana producers; Chelsea Girard, who’s serving up Southern-inspired tapas at Cypress by the Revenir in Shreveport; Ciara Finley of Desiderata Kitchen in Denham Springs, who’s known for menus packed with nourishing meals as well as her commitment to her community; Jeff Heard, whose decades of experience in the city’s restaurant scene brings a well-rounded taste of New Orleans cuisine to his diners at Heard Dat Kitchen in New Orleans; and Ross Dover who’s putting his stamp on the beloved menu at Palmettos on the Bayou in Slidell.

EM’S BAKERY

Born and raised in Lafayette, Michelle’s culinary journey took root during her brief stint in New Orleans. After attending college in Baton Rouge, she moved to the Crescent City and started working at a local ramen shop, where a passion for food quickly ignited. That hands-on experience inspired her interest in the culinary arts and set her on track to become a Louisiana baking sensation.

After her time in New Orleans, Michelle returned to Baton Rouge, where she continued exploring her newfound love for culinary pursuits. She joined the staff at Umami Japanese Bistro as a sushi chef
