Lean and Enriched
A lean dough is the most basic type of yeast dough, and only the essentials—flour, water, salt, and yeast—are used to make it. Pizza doughs and French baguettes are classic examples of lean dough. Adding sugar or another sweetener, butter or another fat, milk or another dairy, or eggs to a lean dough makes it enriched. Think buttery brioche, pillowy challah, and melt-in-your-mouth cinnamon rolls.
