BUBBLE BREAD WITH CHARCUTERIE TOPPING
Entertaining over the holiday season is fun and this is a great sharing snack or starter to serve to the guests who pop around. If you’re short on time, you can also use ready-made store-bought bread dough, but make sure your pans are hot so the dough bubbles as it bakes.
Serves: 6-8
Preparation time: 40 minutes, plus rising time
Baking time: 5 minutes per batch
Oven temperature: 220 °C
♥ 680g (1,250ml) white bread flour
♥ 10ml salt
♥ 7g (10ml) instant dried yeast
♥ 30ml olive oil
♥ approximately 430ml lukewarm water
CHARCUTERIE TOPPING
♥ 60ml olive oil
♥ 20ml red wine vinegar
♥ 1 clove garlic, crushed
♥ 140g prosciutto or other sliced cold meats of your choice
♥ 150g pearl mozzarella balls
♥ 1 × 280g jar marinated artichokes, drained and quartered
♥ 30g fresh basil leaves, torn
Sift the flour and salt into a large bowl. Stir in the yeast. Make a well in the centre of the flour. Mix the oil into the water and then add the liquid gradually. Add enough liquid to make a soft, workable dough. Turn the dough out onto a lightly floured surface and knead for 10 minutes. Alternatively, you can use a food processor with a dough hook to do the kneading. Once the dough is smooth and elastic, roll it into a ballabout 2 hours or until doubled in size.
