Masala spatchcock chicken

All the basic ground spices from your spice cupboard go into this beautifully flavoured chicken.

SERVES 4PREP 20 mins, plus marinatingCOOK 50 mins – 1 hr

✱ Spatchcock chicken, around 1-1.5kg

FOR THE MARINADE

✱ 2.5cm piece of ginger, peeled and grated✱ 6 garlic cloves, grated✱ 2tsp chilli powder✱ 1tsp ground turmeric✱ 2tsp fine sea salt✱ 2tsp garam masala✱ ½tsp freshly ground black pepper✱ 1tsp ground✱ 2tsp ground coriander✱ 2tbsp lemon juice✱ 1tbsp rapeseed oil
