Ham and sauerkraut croque

Based on the classic croque monsieur, this is a great way to use up cooked ham, but shredded turkey or chicken would be great, too. I’ve introduced sauerkraut because I love the flavour thwack it adds to the rich cheese and salty ham combo – kimchi would also work well, and you could pop a fried egg on top to make it a croque madame.
