RECIPE NOTES: Squacquerone is a soft fresh curd cheese with a delicately tangy flavour. Substitute stracchino, buffalo mozzarella, stracciatella or seasoned ricotta. You can deep-fry the polenta a few hours ahead of time.

It all started with a tiny sandwich shop. When former chef and travel agent Jake Cassar opened Mortadeli in the midst of Victoria’s lockdowns in 2021, the idea was to sell sandwiches, along with coffee and a few premium deli items.

“At the start, it was just antipasto, cheese, stuff you couldn’t get in Torquay,” Cassar says. “I used to travel a lot, and I was missing Europe. So I thought, I’m going to bring a piece of Europe here.”

The response was phenomenal. So much so, the original Mortadeli was soon
