IN 2022 I was delighted to be asked to judge at the World Cheese Awards. This event had originally been planned to take place in Kyiv but for obvious reasons it had to be relocated. Wales kindly offered to play host and so the panel of judges, along with more than 4,000 cheeses, headed to Newport instead.
I’ll let you imagine how incredible a room filled with this number of cheeses looks and smells but what impressed me just as much was the large showcase of food and drink producers from Wales that were also exhibiting. Salt marsh lamb, beef, honey, game, beer, cider, perry, shellfish, whisky, tea andproudly being offered for us to taste. The variety was as exceptional as the quality. Then, of course, there were the leeks, which have been associated with Wales for hundreds of years. This month’s recipes celebrate Cymru’s wide range of food products, so come St David’s Day you can take part with these Welsh dishes.
