Yung chow fried rice

A scrumptious spin on the beloved dish

Heat 1 tbsp vegetable oil in a wok or large frying pan, then fry off 2 beaten eggs like an omelette. Remove egg from heat and transfer to a plate just before it’s fully cooked and set (it will keep cooking after removal from heat). Heat another tablespoon of oil in same wok/pan over a high heat
