Brown butter boxty blinis
Ireland meets Eastern Europe by way of Scandinavia – the perfect mash-up for Eurovision! Boxty is a traditional Irish potato bread or pancake that has subtle regional differences. It can be made from grated potato, or a mixture of leftover cooked potato and raw. We’ve transformed ours into dainty, pan-fried blinis topped with smoked trout and soured cream.

1 medium baking potato (about 300g)50g butter, plus 2 tbsp1 small, starchy potato (about 75g), such as King Edward, coarsely grated75g plain flour½ tsp bicarbonate of soda¼ tsp ground1 egg, beaten100ml buttermilk or whole milkhandful of parsley, finely chopped2 tbsp finely sliced chives, plus extra to serve2 tsp rapeseed oil150g soured cream100g smoked troutdill fronds, to serve (optional)
