Colombian arepas with aji casero

PREP + COOK TIME 35 MINUTES MAKES 8

180g grated mozzarella cheese

80g feta cheese

50g butter

AREPAS

2 cups (300g) masarepa or fine cornmeal (see note)

1 teaspoon table salt

20g butter, grated

AJI CASERO

2 Roma tomatoes, deseeded,

chopped finely

2 chillies, chopped finely

1 spring onion, sliced thinly

½ cup coriander, chopped

finely

1 garlic clove, crushed

2 tablespoons lime juice

¼ cup (60ml) white wine

vinegar

To make arepas, using your hands, combine cornmeal, salt and 2 ½ cups (375ml) water in a large bowl. Knead to form a smooth dough (add more cornmeal if required). Add butter and 100g of the grated mozzarella.
