EAT THE SEASON… basil

Green pesto

■ PREPARATION TIME 10 minutes
■ COOKING TIME 2 minutes
■ SERVES 4

YOU WILL NEED

✔ 70g pine nuts ✔ 180ml olive oil ✔ 100g basil ✔ 80g Parmesan ✔ 2 garlic cloves ✔ 1 tbsp lemon juice ✔ salt and pepper, to taste

DIRECTIONS

■ Toast the pine nuts by spreading in single layer in a heavy frying pan. Cook over medium heat, stirring frequently, until lightly toasted for 1 to 2 minutes.

■ Combine the oil, basil, cheese, garlic, nuts and 1 tbsp lemon juice (if liked) in the bowl of a blender until mixed.
