SAUSAGE, HALOUMI & ROAST VEGIE TRAY BAKE
SERVES 4 PREP 15 MINS COOK 50 MINS
• 6 Italian-style sausages
• 500g garlic and rosemary mixed roast vegetables
• 1 red capsicum, deseeded, cut into 3cm chunks
• 225g haloumi, cut into 3cm chunks
• 2 Turkish bread rolls, cut into 3cm chunks
1 Preheat oven to 220°C. Line a large oven tray with baking paper.
Using a sharp knife, pierce each sausage. Add to baking tray with mixed roast vegetables and capsicum. Drizzle with olive oil and season. Bake 40 mins, turning halfway through.
