CHICKEN, CHEDDAR & ONION PIES

MAKES 6 PREP 10 MINS COOK 1 HOUR 10 MINS

30g butter, plus extra to grease

1 large brown onion, thinly sliced

600g chicken breast, cut into 2cm chunks

1 tbsp Dijon mustard

1 tbsp plain flour

1½ cups milk

1½ cups grated cheddar cheese

1 tbsp picked thyme leaves

3 sheets shortcrust pastry

3 sheets puff pastry

1 egg, beaten

Heat butter in a large saucepan over medium heat. Add onion and cook, stirring occasionally, 5 mins or until softened. Add chicken and increase heat to medium-high. Cook a further 5 mins or until browned. Add mustard, stir to combine then add flour. Cook 1 min or until golden. Slowly add milk, stirring constantly, until smooth. Cook 2-3 mins or until thickened. Remove from heat. Stir in cheese and add thyme leaves. Season with black pepper. Transfer mixture to a large
