Creamy Tomato Rigatoni
SERVES 4-5
INGREDIENTS
3 cloves garlic, crushed
¼ cup (20g) finely grated parmesan
500g rigatoni
3 tblsps unsalted butter
350ml passata
1 tblsp tomato paste
1 cup (250ml) thickened cream
1 tsp dried oregano
½ tsp dried chilli flakes
TO SERVE
¼ cup basil leaves
Thinly sliced finely grated parmesan
METHOD
1 Bring a large pot of salted water to the boil over high heat. Crush the garlic and grate the parmesan (if not pre-grated).
