WHAT IS PASSATA?
Passata is a tomato purée made by part boiling ripe tomatoes just until the skins split. The tomatoes are then peeled and passed through a mouli press to remove any seeds or leftover skin, and to remove all the liquid from the tomatoes. This purée is bottled (sometimes with basil), sealed and cooked in boiling water to preserve it. Passata
