Fusion restaurants are tricky. Successfully combining the culinary DNA of two cultures is no mean feat. Hats off to the likes of JeanGeorges Vongerichten, with his Michelinranked combination of French and Asian flavours, and Kiwi chef Peter Gordon, who’s been described as the ‘godfather’ of fusion cooking. But the Vongerichtens and Gordons of this world are rare.

So, it’s with anticipation that I make my way to The Blue Pelican in Deal, where the big idea from chef Luke Green seems to be East meets West and lives happily ever after. The restaurant is owned by ex-Wallpaper magazine design editor Alex Bagner and her husband, Chris
