BUTTERMILK PUDDING with easy CARAMEL SAUCE
SERVES 8 / PREPARATION TIME:15 MIN / BAKING TIME: 45-60 MIN
◗ 250ml (1c) self-raising flour
◗ pinch of salt
◗ 15ml (1T) butter
◗ 250ml (1c) sugar
◗ 4 extra-large eggs
◗ 1 litre buttermilk or low-fat plain yoghurt
CARAMEL SAUCE
◗ 500ml (2c) cream
◗ 60ml (¼c) golden syrup
◗ 125ml (½c) castor sugar
◗ 10ml (2t) cornflour
Preheat the oven to 180°C. Spray a deep ovenproof dish or 6 to 8 ovenproof cups with non-stick spray.
1 Sieve together the self-raising flour and salt.
2 Cream the butter and sugar and add the eggs. Beat well, then add the buttermilk or yoghurt, alternating with the flour and beat well.
3 Pour into the prepared dish or cups and bake for 50-60 minutes till set and golden brown on top.
