MAKES 32 PREP + COOK TIME 1 HOUR 20 MINUTES (+ COOLING & STANDING TIME)
3 eggs
¾ cup (165g) caster sugar
1 teaspoon vanilla bean paste (or vanilla extract)
2 tablespoons finely grated lemon, orange or mandarin rind
2½ cups (375g) self-raising flour
