1 tbsp olive oil
2 red capsicums, sliced
1 red onion, halved and sliced
420g can no-added-salt four bean mix, rinsed and drained

400g can no-added-salt chopped tomatoes
Freshly ground black pepper
Handful of coriander, chopped
4 corn tortillas 100g light sour cream
60g (½ cup) grated reduced-fat cheese
1 Heat the oil in a medium non-stick frying pan over medium heat. Add the capsicum and onion. Cook, stirring often, for 6-7 minutes or until the onion and capsicum softens.
