Five Ways with Peach Cobbler

SLOW COOKER PEACH COBBLER

Makes 8 to 10 servings

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
2 large eggs, room temperature
1 cup plus 2 tablespoons sugar, divided
¼ cup unsalted butter, melted
2 tablespoons whole buttermilk, room temperature
1 teaspoon vanilla extract
5 cups sliced fresh peaches
1 teaspoon ground cinnamon
Vanilla ice cream, to serve

1. Spray the bowl of a 6-quart slow cooker with baking spray with flour.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, whisk together eggs and 1 cup sugar until well combined. Stir in melted butter, buttermilk, and vanilla. Add flour mixture, stirring until combined. Pour half of batter into slow cooker (about 1 cup).

In another medium bowl, combine peaches, cinnamon, and remaining 2 tablespoons sugar.
