Grilled Crawfish Burgers with Lemon Sauce

MAKES 6

½ cup mayonnaise
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
1 tablespoon water
¼ teaspoon kosher salt
1 (12-ounce) package cooked crawfish tails, drained and chopped
1 cup crushed buttery round crackers
¼ cup sliced green onion
1 large egg
1 tablespoon heavy whipping cream
1 teaspoon seafood boil seasoning
6 (1-inch-thick) slices French bread
Sliced tomato, shredded lettuce, potato chips, and hot sauce, to serve

1. In a small bowl, combine mayonnaise, lemon zest and juice, 1 tablespoon water, and salt.

In a large bowl, stir together crawfish, crushed crackers, green onion, egg, cream, and seafood boil seasoning until well combined. Let stand for 10 minutes. Divide mixture into 6 portions (about ½ cup each), and flatten into patties.
