tourist may encounter many surprises when visiting Mauritius. Yet the greatest, in all likelihood, is the local cuisine: the massive presence of immigrants from the Indian subcontinent (70 per cent), who live alongside Africans, Creoles, and other minorities making up the remaining 30 per cent, makes for a cuisine representative of all these cultures, and with truly excellent results. Another surprise comes from the size of the island: the collective imagination has it that Mauritius is a kind of Peter Pan’s Neverland. In reality, the island is large enough to require a two-hour drive from the northern to the southern end
