A feast for champions

Venison burger with béarnaise mayo and five-ring salad

To me venison is the champion of all meats: rich in protein and key nutrients. Here I’ve used it in an epic burger served with an Olympic flag-inspired salad.

Serves 6

▶ Burger

600g venison mince300g pork sausage meat1 small red onion, finely chopped2 tsp Dijon mustard1 tsp Worcestershire sauce30g parsley, chopped1 tsp fine sea salt (2 tbsp oil for cooking)

 Béarnaise mayo

1 tsp white cider vinegar1 small shallot, peeled and finely diced1 tsp Dijon mustard4 tbsp mayonnaise10g tarragon leaves, finely chopped
