TEXAN SLOPPY JOES WITH CORN SLAW
MAKES 6 PREP 15 MINS
COOK 20 MINS
• 1 tbsp olive oil
• 1 onion, thinly sliced
• 1 red capsicum, seeded, thinly sliced
• 1 carrot, grated
• 500g beef mince
• 35g pkt taco seasoning
• 400g can tomato puree
• 6 large soft white damper rolls, halved, toasted
• ½ cup grated cheddar
CORN SLAW
• 2 cups shredded cabbage
• 400g can corn, rinsed, drained
• 2 green onions, chopped
• ¼ cup sour cream
• 2 tbsp lime juice
1 In a large frying pan, heat oil on high. Saute onion, capsicum and carrot 3-4 mins until tender.
2 Add mince to pan. Brown 5-6 mins, breaking up lumps. Stir in taco seasoning. Cook 2 mins.
3 Mix in tomato puree. Reduce heat to low. Simmer 4-5 mins until mixture thickens.
In a large bowl, toss all ingredients together.
