Cajun blackened chicken with guava pickle

SERVES 4 TO 6

For the guava pickle

80ml palm or light brown sugar 60ml water 125ml white vinegar 1 stick cinnamon 3 cloves 2,5ml fennel seeds Pinch of poppy seeds 5ml salt 2,5ml or more red chilli flakes 12mm piece of fresh ginger, 5ml orange or lemon zest 4 medium guavas, cut into wedges 1 large starfruit or kiwifruit, cut into rounds
