Falafel wraps with hummus & slaw

PREP + COOK TIME 40 MINUTES SERVES 6

2½ cups firmly packed coriander leaves

2 cups (300g) frozen broad beans, thawed, peeled

¾ cup (70g) rolled oats

¼ cup (40g) white sesame seeds

3 garlic cloves, crushed

1 tablespoon ground cumin

400g can brown lentils, drained, rinsed

Salt and freshly ground black pepper, to season

3 cups (750ml) vegetable oil

150g rainbow coleslaw mix 2 small cos lettuces, quartered

¼ cup (60ml) red wine vinegar

½ cup (130g) hummus

4 wholemeal pita bread pockets, split, toasted

Process coriander, beans, oats, sesame seeds, garlic, cumin and lentils until finely
