Breakfast: Sweet Potato Pudding

1 purple or orange sweet potato, chopped
1 tbsp of ghee
¼ tsp ground cardamom
1 pinch ground nutmeg
¼ tsp ground coriander
½ cup coconut milk as needed
4 ground and skinned almonds or cashews, soaked overnight in salted water
3 diced dates Pinch of salt
