SATISFYING SOUPS

HARISSA-SPICED BUTTERNUT SOUP

This smooth and creamy butternut soup is made extra delicious with the addition of a little harissa paste. You will find this spicy North African red pepper paste in the spice aisle of your local supermarket.

Serves: 4
Preparation time: 20 minutes
Cooking time: 40 minutes

♥ 100g butter
♥ 2 onions, chopped
♥ 45ml harissa paste
♥ 750g butternut, peeled and cubed
♥ 250g sweet potato, peeled and cubed
♥ 1 Granny Smith apple, peeled, seeded and cubed
♥ 1,250ml chicken or vegetable stock
♥ 50ml chopped fresh coriander
♥ squeeze of lime or juice
♥ dried crushed chillies, to serve (optional)

Heat the butter in a large saucepan. Add the onions and sauté over a low heat for about 10 minutes until softened. Add the harissa paste and cook
