Blackberry and elderflower fool

Sweet berries and floral-scented cream make for a simple yet elegant summer pudding.

Serves 4-6Prep 15 mins, plus chillingCook 15 mins

300g fresh or frozen blackberries
120g golden caster sugar
1tsp vanilla bean paste
Juice ½ lemon
300ml double cream
3tbsp elderflower cordial
2tbsp runny honey
150g thick Greek-style yogurt
3-4 shortbread biscuits, crumbled
