Marvellous MINCE

Minced meat is wonderfully versatile and can be served to family or guests. Use it to make an array of delicious dishes inspired by various flavour profiles – think Mediterranean, Mexican and Asian – using affordable beef, pork and chicken mince.

CURRIED beef mince PHYLLO PIE

SERVES 4-6 / PREPARATION: 30 MIN / COOKING & BAKING: 60 MIN

◗ oil
◗ 2 onions, chopped
◗ 3 garlic cloves, crushed
◗ 500g lean beef mince
◗ 30-45 ml (2-3T) tandoori masala or roasted masala
◗ 30ml (2T) ground ginger
◗ 20ml (4t) ground coriander
◗ 2 x 50g tomato paste
◗ pinch each of sugar, salt and pepper
◗ 250g peas
◗ large handful of chopped fresh coriander and flat-leaf parsley
◗ 8 sheets of phyllo pastry
◗ melted butter

TO SERVE

◗ 2-3 mini cucumbers, sliced
◗ 250ml (1c) full-cream yoghurt
◗ pinch of ground cumin
◗ sweet chilli sauce or hot chutney
◗ fresh salad

Preheat the oven to 180°C. Grease an ovenproof dish with nonstick spray.

1 Heat a little oil in a pan and sauté the onions and garlic until soft.

2 Add the mince and sauté until done.

3 Add the spices and tomato paste. Season with the sugar, salt and pepper.
