    Avocado Reuben

    2 slices rye bread

    1/2 avocado, pitted, peeled, and mashed

    1/4 cup sauerkraut

    Thousand Island Dressing (recipe follows)

    Spread Thousand Island dressing on both slices of bread.

    Place the bread slices, dressing side up, in a non-stick skillet over medium heat. Top one piece of bread with the avocado mash, and the other with sauerkraut. Fry the sandwich until lightly browned and heated
