Bland, needs more salt, plain or too much seasoning are just some of the many comments that I have received about my cooking years ago. I must admit that there was a time that I wanted to just give up and resign myself to pre-packed marinated meats, ready-made sauces and other similar products from the grocery. One dinner hosted by a friend from work changed everything.
It was a simple dinner but the flavors were awesome. The steak was neither dry nor bland but succulent and tasty. The sauce of the pasta tasted unique, it was obvious that it did not come from a box. The host admitted that she did not have time to make cheesecake from scratch but the topping was all hers. As a parting gift, she gave each of the guests a jar of marinade. After receiving all the compliments from us, her guests, she said that the secret to all the dishes she served were the marinades, the sauces, spices and other ingredients that add flavor to every dish.
Clutching the jar of marinade at home in my kitchen, it finally dawned on me. I was so preoccupied with the main ingredients and the preparation of my dishes that I overlooked one of the most important components of the dish, those that add flavor to the main ingredient.
From then on I spent an equal amount of time in choosing my ingredients with the seasonings that I paired with them. Little by little and one dish at a time, I got the same compliments that my friend received from us during that dinner and I kept sharing the same idea to them, the secret is one the seasonings.
It was not an overnight success though. At first it was a series of hits and misses. Sometimes I marinated the meat just right and sometimes the meat ended up over soaked. The sauce was too salty, the rub was too spicy and the topping too sweet. Every miss I made I took it as a lesson and as a challenge on my next try. Soon the series of misses became successes!
I want to share with you the lessons I have learned through the recipes in this book. Think beyond simple salt and pepper to season your dishes! Adding flavors to these recipes are what stands between you and preparing the great dishes that you have always dreamed of serving to your family, friends and other loved ones!
