Honey is a pure and natural sweetener that has been consumed by man for centuries. Every year, the honey bees produce about 1 million tonnes of honey worldwide. Of this number, 285 million pounds are consumed by Americans alone.

It never seems to go bad, develop mold or contaminate even when it is not refrigerated after being opened. Archeologists reportedly found 2000-year old honey jars in Egyptian tombs and they were still fresh and tasted delicious!
Since bacteria love sugar, isn’t it surprising that they cannot grow in honey? The reason is that honey is a natural antibiotic. It has a unique chemical composition of relatively high acidic level and low water content that creates a low pH environment, making it extremely unfavorable for bacteria to grow.
