    Soca Soul Food - Dahlia Rose

    APPETIZERS

    SEARED SCALLOPS & HOT SPINACH SALAD WITH BALSAMIC MANGO DRIZZLE

    Ingredients

    2 bags of fresh baby spinach (washed)

    2 lbs. fresh scallops

    1 cup of thin sliced carrots

    5 tsp. of extra virgin olive oil

    1 tsp. of butter.

    ½ tsp of garlic powder

    Salt and Pepper.

    Balsamic Mango Dressing

    4 oz. of balsamic dressing

    3 oz. mango puree

    (Emulsify in food processor or ninja bullet… Blend baby blend!)

    Directions

    Wash and Clean the scallops, dry with paper towel, then sprinkle with salt, pepper and garlic powder. 

    In a frying pan pour in 3 tsp. of olive oil and heat.

    Sear scallops for three (3) Minutes on each side until golden brown, cover with aluminum foil, and place in oven to keep warm.

    In the same pan, add the remaining 2 tsp. of olive oil and added the carrots. Sautee for three minutes before added the balsamic dressing.

    Add the baby spinach, slowly allowing it to sear and shrink as you stir it in with the carrots.

    Finally, add the butter and allow it to melt into the spinach carrot mix.

    Plate the hot spinach mixture and top with the warm scallops.

    Serve and enjoy!
