In Book Number 8, the author proposed how the escaped slaves may have celebrated their First Thanksgiving and First Christmas in 1620. The
foods, menus, recipes and medicines are based on popular foods in the Seventh
Century in the wild or at safe houses. These foods may have been selected by the escaped slaves on their way to freedom on the Underground Railroad. Also, the author illustrated reasons why the slaves escaped.

Bible scriptures were selected on giving ‘thanks’ for all situations. Slaves served
Over 250 years in the United States, without pay.

    The cookbook is dedicated to ancestors of all runaways or escaped slaves, to the world and to Africa.

    The author is thankful to Jesus Christ for giving her the inspiration and knowledge to write the cookbook.

    The major Bible scriptures will be centered around – ‘in all things give thanks’.

    DISCLAIMER

    The Underground Railroad secrets were taken from the slave narratives which are in the public domain by the Library of Congress. The Underground Railroad routes were secrets of many escaped slaves. The language of the slave narratives are those of the ex-slaves.

    All food and menu proposals are those of the author. The author is knowledgeable of food sources of various kinds, wild and domestic. Slave narratives showed methods of food preparation used by the slaves.

    PREFACE

    The purpose of the author is to propose how escaped slaves could have celebrated their First Thanksgiving before 1621 and what foods they ate on the Underground Railroad Routes. In 1620, the successfully escaped slaves could have celebrated with Indian tribes in Florida, Virginia or New York, before statehood of these states. Due to the successfully escaped slaves’ faith, all of the Bible scriptures will be centered around

    Thankfulness and Thanksgiving.

    Slavery has been said to being in Virginia in May 1619. Some of the first slaves were indentured servants and were able to work to be free. However, before the underground railroad, slaves escaped and successfully lived among the Native Americans, such as, in Virginia. Some intermarriages took place.

    Slave trade in America lasted for more than 100 years. Every since that time slaves tried to escape from the south for a better life. Florida was a safe Heaven for escaped slaves before Florida became a state. After the 1700s, slaves in the south who ran away were all trying to cross the Mason-Dixon Line to go free.

    Slaves who were of fair complexion, who could pass for white people and said they were their master. At times, the darker skinned slaves posed as servants for their masters. Some slaves claimed to be nurses for white babies and some men posed as women an women as men.

    Where were the runaways or escaped slaves going? What did they eat? What were the three routes? How did they secure foods?

    Therefore, the proposed cookbook is to illustrate three main routes for the underground railroad and to propose foods for the First Thanksgiving Menus and First Christmas Menus from the wild and safe houses.

    There are three major parts of the Proposed Underground Railroad Seventheenth Century Black Cooks (Successfully Escaped Slaves) First Thanksgiving Menus and First Christmas Menus Emanuel Cookbook. Each part has been designed to include areas of slaves routes for running away. The goal is to give some insights on survival for Thanksgiving and Christmas. Biblical scriptures will be included.

    Slaves were freed by the Thirteenth Amendment in December 1865.
